CSA: Weeks 24+25

Again, apologies for being lazy about posting these updates. But this time, we were busy cooking with all the great stuff we’ve gotten!

Last week, we got okra, a HUGE zucchini, white onions, potatoes, green peppers, lettuce, Japanese eggplant, and parsley.

This week, we got orangy-yellow tomatoes, zucchini, peaches, a cute little round watermelon, awesome-smelling basil, and a few ears of corn.

Ella loves baked eggplant with tomato sauce, so we’ve made that a few times, along with steamed zucchini (not as much of a hit with the under-2 set). We made fajitas with the peppers and onions, used some tomatoes and lettuce in sandwiches, and had tomatoes with a homemade garlic vinaigrette that was an Ella favorite.

We’ve (hopefully) got peach ice cream and tomato/basil/mozzarella salad in our future…
